Ingredients
- 2 slices bread, sourdough
- 2 avocados, sliced or mashed
- 150 g mushrooms, white, quartered
- 2 eggs, medium 1 tbsp. butter
- A little lemon juice, for the avocado
- Salt
- Pepper
- Olive oil
Instructions
- Heat a pan over medium-high heat, add the butter and 1 tbsp. olive oil, the mushrooms, salt and pepper, and cook until softened. When ready, set aside.
- In the same pan, lightly toast the bread slices and set them aside. In the same pan, add a little olive oil and fry the eggs.
- Place the toasted bread on plates, spread sliced or mashed avocado, which has been marinated with a little lemon juice, on top, distribute the mushrooms, and cover with the eggs.
- Sprinkle with salt and pepper and serve.
